mkv to dvd?

hi, i have a big mkv file (hdtv i assume) and I want to convert this to dvd or two dvds or how many ever. How do i convert this type of file to dvd and what settings do i have to keep it order to not loosy that much quality. I know it can be done but i dont know how. thanks

HD streams are still pain in the ass to convert. The best but may end with an error depending on the stream type is Canopus ProCoder 3 - costs around $490.
