Video Player Playlists??

Not sure if this is the right place for this or not, so feel free to move this if needed.

So I took my old PC and made a media center out of it and have close to 2TB of music and video. Most of the Vids are DVD D/L'ed off TTD and are in their orginal Video_TS directories.

What I'd like to be able to do is load up a track off of multiple DVD's into a playlist for play back @ at party.

What is the easiest way to accomplish this? Rip the DVD's to AVI's for individual cuts? I'm a novice with video beyond DL'ing and burning them for playback so any advice is appreciated.
