Audacity.

Audacity is a free, easy-to-use audio editor and recorder for Windows, Mac OS X, GNU/Linux, and other operating systems. You can use Audacity to:

Once you download Audacity, a free Audio editor with every tool you will need for this job, you stream the audio off of the MD into your computer via your soundcard with a cable from Radio Shack, etc. The better the soundcard, the better the results. Soundblasters need not apply. Use Audacity to track the incoming Audio into .wav format.

Voila! You can cut and paste tracks off of the audio file after it is streamed into the hard drive from the MD. Any normalization or noise reduction can be accomplished within Audacity.
