Can't do that on an iPod, unless you encode an entire concert to a single mp3 file.
Someone mentioned here one time that if you put the songs on the iPod in WAV format it is capable of gapless playback. I cannot say that I have ever tried it as everything on my iPods is AAC. You might try it. Perhaps someone else could confirm or refute this.
