......will/should know how to adjust/change text within iTunes for things like Artist, Album, Disk No, etc.
What I'd like to know is is there a small program out there that lets you do the same as iTunes in this regard ? Any help appreciated.

You can do it in Floola or Foobar 2000.

Been using the foo for ages but it won't edit text like iTunes !
Select track or tracks you want to modify, and right-click. Select Get Info from the sub-menu, and modify what you want to.
The available fields to modify change according to whether you select one track or multiples.

OK. Sounds like what I want to do BUT when I right-click I don't get "Get Info". I'm using v0.9.6.9. Do I need to update ?
I'll check-out floola and T&R.

I've updated to the latest foo but I still can't find "Get Info". I know how "Get Info" should work, I've been using iTunes to edit text for ages. It's not there.

I think he means you can just do it in iTunes. The Get Info menu option is unique to iTunes. Most others would call it "properties" or similar.
If you want something other than iTunes for tag editing, download Tag&Rename.

I think you're right J. For the record I took your advice and grabbed Tag&Rename. Works a treat. Thank you very much.
Yes, since the thread title and OP asked about editing in iTunes, my response was regarding what to do within iTunes, not Foobar....
