you need cables

1/8" stereo > 2 x RCA
1/8" stereo > 2 x 1/4"
1/8" stereo > 2 x XLR

The guys at your local music shop (where they sell guitars and stuff) will know what these cables are.

ask the sound guy for a tap he will tell you what kind of connectors you need. I usually bring all three but if you don't want to buy all that you can find out in advance and just get the cables you need for this show.

plug it into the "line in" and set levels just as you would for an aud recording.

most venues (at least in my town) run a mono mix to the pa, so if you want to get fancy you can just record the sbd tap to the left channel and run a room mic to the R channel & mix them together later. If the SBD mix is mono anyways you are losing nothing by doing this (and gaining something).

Out of these three, what provides the best quality? I'm thinking it has to be either the XLR or RCA...

the xlr will, also, you dont neccesarily need to buy seperate cables for all of those. you can buy one 1/8" to say rca then buy adapters that will get you either 1/4 or xlr from the rca...

yeah, adapters can work well

all three will provide the same level of quality since your Hi-MD doesn't have balanced inputs. just don't run 35 feet of cable. and buy good cables (goes without saying)
